# What Can You Do With a Caviar Lime?
Author: [Apeel Team](https://blog.apeelsciences.com/author/apeel-team)
You might have noticed that we’re obsessed with caviar limes. And why not? They’re totally unique and delicious.
This variety of micro citrus is native to Australia but, luckily for us in the Northern Hemisphere, grows very well in the Central Valley of California. The only downside? Caviar limes have a notoriously short shelf life. However, one of the farms near our global headquarters, [Good Land Organics](https://goodlandorganics.com/collections/shop/products/caviar-limes), sells [caviar limes treated with Apeel](https://goodlandorganics.com/collections/shop/products/caviar-limes), meaning that their limes can be shipped across the country and still be crisp and tasty days after you receive them
But how do you eat a caviar lime? You can squeeze the citrusy bulbs into drinks or eat them plain, but they also give a zippy tang to many delicious entrees. Read on for ways to integrate caviar limes into your daily diet, from [Taming of the Spoon](https://tamingofthespoon.com/salmon-stuffed-avocados-with-finger-limes/)’s salmon and avocado recipe to [The Cook’s Pyjamas](https://thecookspyjamas.com/finger-lime-ice-cream-cup-cakes/)’ ice cream cupcakes.
